Music for your Mouth: The Cranberries

My ex-housemate loves the Cranberries, and Enya makes her cry when she drinks gin. FACT.

This is a simple and delicious festive side dish. Save it to impress next Christmas!

Green Bean Cranberry Salad

400g green beans
1/2 cup hazelnuts, toasted and roughly chopped
1/3 cup dried cranberries
Juice of half a lemon
1 tsp lemon zest
1 clove garlic, minced
2 Tbsp olive oil
Salt and pepper

Top and tail your beans. Prepare a large bowl of iced water.

Soak cranberries in hot water.

Bring a pot of salted water to the boil. Add green beans and cook for 2-3 mins until they turn bright green and slightly tender.

Drain and transfer to iced water for 30 seconds – 1 minute. Drain.

Whisk together lemon zest, garlic, oil and salt and pepper in small bowl.

Combine beans, nuts, cranberries and dressing. Serve.

    1. Me too – such a great combination! Ooh good on you, I should really start preparing too – I can’t believe how close it is again! The good thing about this recipe is the simplicity – it takes about 10 minutes to throw together – great for the last minute rush on Christmas morning.

        1. A mini holiday of sorts just before Christmas. Most of my family live in Perth, and one side of the family are all coming over to spend Christmas in Melbourne for the first time. So we’re going on a little getaway to the Mornington Peninsula for some serious food eating, wine drinking and hot spring sitting πŸ˜‰
